Drinking apple cider vinegar was said to lower glucose and insulin levels after a meal.

„For example, one study [1] showed that drinking apple cider vinegar effectively lowers glucose and insulin levels after a meal. Another study [2] indicates that consuming vinegar before bedtime alleviates waking glucose levels in adults with well-controlled type 2 diabetes.”Na przykład w jednym z nich [1] wykazano, że picie octu jabłkowego skutecznie obniża poziom glukozy i insuliny po posiłku. Inne badanie [2] wskazuje, że spożycie octu przed snem łagodzi stężenie glukozy w stanie czuwania u dorosłych z dobrze kontrolowaną cukrzycą typu 2.

Consuming vinegar before bedtime was said to alleviate glucose levels in adults with well-controlled type 2 diabetes.

„Another study [2] indicates that consuming vinegar before bedtime alleviates waking glucose levels in adults with well-controlled type 2 diabetes. In turn, another study [3] found that consuming vinegar has a positive effect on glucose metabolism and improves the glycemic response to carbohydrate-rich meals.”Inne badanie [2] wskazuje, że spożycie octu przed snem łagodzi stężenie glukozy w stanie czuwania u dorosłych z dobrze kontrolowaną cukrzycą typu 2. Natomiast w kolejnym badaniu [3] ustalono, że spożywanie octu ma pozytywny wpływ na metabolizm glukozy, poprawia odpowiedź glikemiczną na posiłki bogate w węglowodany.

In people with diabetes, daily consumption of 10–30 ml of vinegar was said to improve the response to carbohydrate-rich meals.

„In patients with diabetes, daily intake of 10–30 ml of vinegar improved the glycemic response to carbohydrate-rich meals. The cited studies show that people with diabetes can confidently make use of the properties of apple cider vinegar, which may significantly improve their quality of life.”U pacjentów z cukrzycą dzienne przyjmowanie octu w ilości 10–30 ml poprawiło odpowiedź glikemiczną na posiłki bogate w węglowodany. Przytoczone badania pokazują, że osoby chore na cukrzycę mogą śmiało korzystać z właściwości octu jabłkowego, co może znacznie poprawić komfort ich życia.
Hubert Czerniak

Apple cider vinegar is said to speed up metabolism, and Hubert Czerniak recommends water with a tablespoon of vinegar in the morning.

„Apple cider vinegar stimulates the immune system and helps fight excess mucus, as well as excellently speeds up metabolism. It relieves inflammation and blocks histamine production. It is always worth drinking a glass of water with a tablespoon of apple cider vinegar in the morning, before pollen attacks us.”Ocet jabłkowy stymuluje układ odpornościowy i pomaga w walce z nadmiarem śluzu oraz doskonale przyśpiesza metabolizm. Łagodzi stan zapalny i blokuje wytwarzanie histaminy. Zawsze rano warto pić szklankę wody z łyżką octu jabłkowego, zanim zaatakują nas pyłki.

Apple cider vinegar may cause stomach pain, nausea, and weakness.

„In some people, apple cider vinegar may cause: stomach pain, nausea, weakness. People with diseases of the digestive system (the digestive tract, namely the oral cavity, throat, esophagus, stomach, small intestine, large intestine, liver, and pancreas) should drink only diluted vinegar, and with an interval of 30–40 min.”Ocet jabłkowy u niektórych osób może powodować: ból brzucha, nudności, słabość. Osoby z chorobami układu trawiennego (przewód pokarmowy, czyli jama ustna, gardło, przełyk, żołądek, jelito cienkie, jelito grube, wątroba i trzustka) powinny pić tylko i wyłącznie ocet rozcieńczony i to w odstępie 30–40 min.

Jeśli jednak i w tym przypadku pojawi się uczucie dyskomfortu trawiennego, należy zrezygnować z picia octu.

Michał Tombak believes that for medicinal purposes, it is worth making vinegar yourself.

„I will only write that if you want to obtain apple cider vinegar with medicinal properties, make it with your own hands. This is important for one more reason. When we make medicine ourselves and (importantly) with the thought that it will help us, it has additional power.”Napiszę jedynie, że jeżeli chcecie otrzymać ocet jabłkowy o właściwościach leczniczych, zróbcie go własnymi rękami. Jest to ważne jeszcze z jednego powodu. Kiedy robimy lekarstwo własnoręcznie i (co ważne) z myślą, że nam pomoże, ma ono dodatkową moc.

Michał Tombak’s homemade recipe involves apple fermentation, and the finished vinegar is usually obtained after 40–60 days.

„This process usually takes 40–60 days and depends on the type of apples, honey and the amount of water, as well as other factors. When the liquid becomes clear, it is filtered and poured using a funnel into half-liter bottles. The bottles should be tightly sealed (the cork can be covered with wax) and stored in a cool place.”Proces ten trwa zwykle 40–60 dni i zależy od rodzaju jabłek, miodu i ilości wody oraz innych czynników. Gdy płyn zjaśnieje, filtruje się go, przelewa za pomocą lejka do półlitrowych butelek. Butelki należy szczelnie zamknąć (korek można zalać woskiem) i przechowywać je w chłodnym miejscu.

Apple cider vinegar contains compounds derived from apples and produced during bacterial activity, if it has been prepared properly.

„It should be known that apple cider vinegar is obtained by a microbiological method, which is why it contains biologically active substances, including: organic acids, sugars, phenolic substances, and aldehydes, which are transferred from the raw materials, as well as those formed as a result of acetic acid bacteria metabolism during vinegar production and maturation.”Trzeba wiedzieć, że ocet jabłkowy otrzymywany jest metodą mikrobiologiczną, dlatego zawiera on substancje biologicznie czynne, m.in.: kwasy organiczne, cukry, substancje fenolowe, aldehydy, które są przenoszone z surowców, a także te powstałe w wyniku metabolizmu bakterii kwasu octowego podczas produkcji i dojrzewania octu.

In rats with diabetes, apple cider vinegar improved selected antioxidant markers and reduced some signs of liver and kidney damage.

Aim of the study: Diabetes mellitus (DM) is a globally growing health problem and one of the most prevalent endocrine disorders worldwide. Chronic hyperglycemia status favors the manifestation of oxidative stress by increasing the production of reactive oxygen species and/or by reducing the antioxidant defense system activity.

Results: Moreover, the plasma concentration of magnesium, calcium (p < 0.001) and copper increased after ACV administration. Iron levels however decreased. The concentration of vitamin E, an important antioxidant in vivo, was raised. In conclusion, the findings show that ACV possesses significant antihyperglycemic and antioxidant effects in an experimental model of DM, by preventing diabetic complications in liver and kidneys.

„Buffered vitamin C L-ascorbic acid is sour, similar to vinegar in its acidity, and in some individuals it can irritate the stomach or when applied the skin. The buffered form of vitamin C, sodium L-ascorbate (often sold as "sodium ascorbate"), or other mineral salts, e.g. potassium, calcium, or magnesium ascorbate, are non-acidic and will not upset the stomach or irritate the skin. This buffered sodium ascorbate form is utilized for intravenous administration of vitamin C. Although it contains sodium, it does not much affect blood pressure since it lacks the chloride that is in salt.”Buffered vitamin C L-ascorbic acid is sour, similar to vinegar in its acidity, and in some individuals it can irritate the stomach or when applied the skin.
