Fermenting pine pollen with fungi increased its antioxidant activity, suggesting potential use in functional foods and nutraceuticals.

Aim of the study: Fermentation is an effective method to enhance the bioactivity and bioavailability of bioactive compounds in plant foods. In this study, the effects of fermentations with Wolfiporia cocos, Morchella sp., and Ganoderma lingzhi on the total phenolics, total flavonoids, monomeric phenolic compounds, and antioxidant activities of fermented pine pollen were investigated.

Results: PRACTICAL APPLICATION: This research shows that fermentation of pine pollen with edible fungi boosts its antioxidant content and capacity. The fermented pine pollen could be a promising natural ingredient for functional foods like energy bars, beverages, or dietary supplements. It helps food manufacturers create food products for health-conscious consumers seeking natural and highly bioavailable antioxidants. It also offers a practical way to improve the nutritional value of pine pollen-based food products.

In a study on bees, pine pollen increased glucose levels in their tissues and was considered a source of energy that bees could use quickly.

Aim of the study: Human activities associated with large-scale farms and the monocultures expose honey bees to one type of food. Moreover, there is an ongoing decline of plant species producing pollen and nectar in Europe.

Results: Pollen from plants blooming in the summer and autumn increased the concentrations of proteins, glycogen and triglycerides in the fat body, especially that from the third tergite. The accumulation of these compounds was associated with an increased the length and width of trophocytes as well as with enhanced metabolic activity, which was evidenced in the increasing diameter of oenocyte cell nuclei. It seems a balanced multi-pollen diet is more valuable for bees, but it is important to understand the effects of the particular pollen types in the context of a mono-diet. In the future, this will make it possible to produce mixtures that can ensure homeostasis in the apian body.

„Good lecithin supplements also contain a balanced mixture of linoleic acid and linolenic acid. [69-71] Grape Seed Extract - contains lectins with affinity for norovirus. Norovirus outbreaks are common in autumn, spring, and on cruise ships. Some restaurants use cleaners containing grape seed extract. Some food particles, including dairy products, neutralize these lectins. When needed, grape seed extract is best taken with water on an empty stomach. Coenzyme Q10 and Benfotiamine - Humans can produce CoQ10, but as we age, demand tends to exceed production. These nutrients are important for cellular energy production.”Good lecithin supplements also contain a balanced mixture of linoleic acid and linolenic acid. „Pycnogenol - This supplement comes from French Pine Bark and has been shown to have protective capabilities in several cellular functions including the repair of brain cells after a stroke. It has also been shown to improve kidney flow and function, as well as help to reduce blood clots as an anticoagulant. This is important for COVID-19 patients since blood clots have been found in many parts of the body even after symptoms have been resolved. (Possible dosage 50-100 mg/day). Olive Leaf Extract - Olives are one of the cornerstones of the Mediterranean Diet and have been helping people to be healthier for thousands of years.”Pycnogenol - This supplement comes from French Pine Bark and has been shown to have protective capabilities in several cellular functions including the repair of brain cells after a stroke.
